We solve it with a second service point, three RBS-certified bartenders and roughly four hundred pounds of ice for a two-hundred-guest night. The menu is deliberately fast: two signature cocktails, a house margarita built for volume, beer and wine, and a zero-proof option that tastes like a real drink for the guests driving home. Menus print in English, Spanish or both, and we serve adults only, 21+, carded at the bar.
